Gluten Free Gnocchi 1

HOME MADE GNOCCHI DI PACIANO

GNOCCHI

Ingredients – For 4/5 person:

4 ¼ cups of organic potato
1 ¼ cups of gluten free flour (half Bi-Aglut and and half Schar Mix B should be mixed together to obtain the best “gnocchi” dough)
1 organic egg

Direction:


Boil potato (with skin) until cooked, around for 30 minutes cooking.
When ready, peel them and press through a potato ricer into a large bowl, and wait until it’s completely cool.
Mix together the riced potatoes, the flour and the egg (the dough should be well mixed and easy to handle).

Roll into a sausage-shape, and cut into small pieces (1 inch in diameter)

Cook the dumplings in salted water until they come to the surface of boiling water then serve with meat ragout or butter and parmesan cheese or pesto, or ragu!!
